I have done the shorcut from the user/....../local/temp and move it to the desktop.

The formula you give I did not know and I learn... but is this procedure not giving access to all "temp's" present on the C drive, I mean all temp folder we can find in the user but also in Windows... ?

If yes, a delete will affect all the folders... or only the files present in this folders... You see I am lost.

The %tmp% shortcut opens the folder that Windows uses for temp files and most programs also use. If a program uses it's own temp folder instead of the windows, this will not show those files.
