a system I am considering requires a server platform to support RAID...but I think it's not the way to go.

You can run vista the same way, the only real underlying difference between the two aside from extra server functions and programs in server 2008 is which services are disabled and enabled.
Windows Server 2003 was exactly like XP in every way in the interface, it just had anything that a normal desktop user would want disabled.. like sound. However, it would have network options enabled that you wouldn't need on a desktop like IIS.
People seem to have this weird idea that server hardware and software is so superior to that of their desktop brothers. The only difference is what is packaged with them and what is enabled and disabled in the settings. If you're a desktop user, stick with a desktop OS, if you're going to run a server, use a server OS to ensure there is less issues making changes to suit your needs. If you really want get the best performance out of Vista, don't go with ultimate. Everyone I see seems to go with 'ultimate'. Why? Because of the name, it makes you feel 'ultimate'? Those extra features are just eyecandy and 'fluff' that only holds interest for at most a few weeks. Dreamscene? really? come on. Get either Home Premium or Business depending on what you primarily use it for and download the free program vlite. You can setup your copy of vista and gut out everything you don't need or want.
