Can you monitor a single channel from the preview window? Let's say you shot an interview and the sound is on channel 1, the camera mic is channel two and it's pretty noisy. I want to just 'switch' off the noisy channel in the preview window before I put it on the timeline. Can this be done?

Yes you can with EDIUS 8 workgroup. The function is called monitoring Mode.
In EDIUS 7 pro that function is also available IIRC.

Open the Audio Mixer. In the top right corner is the PLR/REC button. Click on PLR. Above the slider track are the Solo and Mute buttons. Use as needed.
