SD - Hands down the best capture utility is Scenalyzer. One of the best $40 I ever spent on software.
HD - Edius....not many alternatives if you want to upconvert to HQ. HDV editing on Edius is not feasible without a supercomputer....unless you want to do straight cuts. After capturing HD with on the fly upconvert to HQ I am still experimenting with different utilities for archiving. Right now the one in the lead for me is one somebody here recommended for free. It's called Picasa and is distributed by Google. Pretty capable. Still not sold on it though cause you can't scrub a video file but naming and cataloging is pretty slick.
